Tamoto Rice Recipe : A Flavorful One-Pot Meal

Tomato rice, also known as Thakkali Sadam in Tamil, is a delicious and aromatic South Indian dish made primarily with rice and tomatoes, seasoned with spices and herbs. This simple yet flavorful meal is perfect for a quick lunch or dinner and can be enjoyed on its own or paired with yogurt or raita.

 Ingredients

- Rice
- Oil/Ghee
- Onion
- Green Chili
- Ginger-Garlic Paste
- Tomatoes
- Salt
- Garam Masala Powder
- Red Chili / Turmeric Powder
- Coriander Leaves
- Lemon Juice
- Whole Cashews

Cooking Method

1.Preparation of Rice:
- Rinse the rice under cold water until the water runs clear. Soak it for about 20–30 minutes, then drain.

2.Tempering Spices:
- In a pressure cooker, heat oil or ghee over medium heat. Add whole spices like cumin seeds, bay leaf, and cinnamon stick. 

3.Sautéing Onions and Tomatoes:
- Add chopped onions and green chili to the pot.
- Stir in the ginger-garlic paste and cook until the raw smell disappears.
- Add chopped tomatoes along with salt, turmeric powder, red chili powder, and garam masala. Cook until the tomatoes soften and the oil starts to separate from the mixture.

4.Cooking Rice:
- Add the soaked rice to the tomato mixture and gently stir to coat the rice with the masala.
- Pour in the measured water and bring it to a boil. Cover the pressure cooker, and cook for about 2 whistles. 

5.Finishing Touches:
- Once cooked, fluff the rice gently with a fork. Stir in chopped coriander leaves and lemon juice if using.
- Optionally, you can fry cashews in ghee until golden brown and sprinkle them on top for added crunch.

Serving Suggestions

Tomato rice is best served hot with a side of yogurt or onion raita to balance its spiciness. You can also enjoy it with papad or pickles for an extra flavor boost.

- Use ripe tomatoes for better flavor; they add natural sweetness and acidity.
- Adjust spice levels according to your preference; feel free to add more green chilies or chili powder if you like it spicy.
