  • 1 Teaspoon urad dal (split black gram)
  • 1 Teaspoon chana dal (split chickpeas)
  • 1/2 Teaspoon turmeric powder
  • A pinch of asafoetida (hing)
  • 2 Green chilies, finely chopped
  • 8-10 Curry leaves
  • Salt to taste
  • Fresh coriander leaves for garnish

For the Lemon Mixture:

  • Juice of 2 lemons
  • 1 Teaspoon grated ginger
  • 1 Tablespoon oil
  • 1/2 Teaspoon mustard seeds
  • 1/2 Teaspoon urad dal
  • 1/2 Teaspoon chana dal
  • 1 Dried red chili (optional)
  • A pinch of asafoetida

Instructions:

  1. In a mixing bowl, mix lemon juice and grated ginger. Set aside.
  2. If not already done, cook the rice and let it cool. Ensure that the grains are separate.
  3. In a pan, heat oil and add mustard seeds. Once they splutter, add urad dal, chana dal, peanuts, turmeric powder, hing, green chilies, and curry leaves. Sauté until the dals turn golden brown.
  4. Pour the prepared lemon-ginger mixture into the pan. Mix well and cook for a couple of minutes.
  5. Gently fold in the cooked rice, ensuring that it's well coated with the tempered mixture. Add salt according to taste.
  6. In a separate small pan, heat oil for the final tempering. Add mustard seeds, urad dal, chana dal, dried red chili, and a pinch of asafoetida. Once the dals turn golden, pour this tempering over the lemon rice.
  7. Garnish with fresh coriander leaves and serve your Lemon Rice hot or at room temperature.
